Use the flat non-stick plate to sauté mushrooms, fry bacon, onion, in fact any filling you fancy, before adding your eggs. After about three minutes, flip the whole thing over on its patented hinge, which lets you 'pivot' the pan both ways with ease, before turning out golden brown, melt-in-the-mouth omelettes.
